As many as four different additions of hops, with the first directly in the starting mash before it is boiled, and the last after boiling. When the wort reaches the whirlpool tank, freshly ground coriander seeds and orange peels are added. Dry-hopping is carried out twice, first when the temperature of 15°C is reached after fermentation, and then a second time after three days of contact between the blend of American hops and the beer, before refermentation in the bottle.

FEATURES

Golden in colour, with an evident haziness and a head of dense white foam made up a multitude of tiny bubbles produced by the medium carbonation. An array of citrus fruits, wildflowers and hops in the bouquet, mixed with notes of freshly baked bread and biscuits. A blend of tropical fruits, bananas, pineapple, ripe Sicilian citrus fruits, hop resins and wildflowers invades the air almost surreally. Crushed oranges steeped in spirits, lemons and citrons are followed at intervals by lighter balsamic and spicy notes.
The taste presents a slender structure with an excellent balance between bitterness and the malts and cereals present. In addition to barley malt, our Midòna Limited Edition is given its essential "whiteness" by emmer wheat grown in Romagna, common wheat malt and Khorosan wheat, also from Romagna, which is an ancient variety of durum wheat that came originally from Mesopotamia, with an exceptional fragrance and a characteristic colour. Spices: to complete the beer's "whiteness", obviously we used coriander seeds that we ground freshly ourselves, and as many as three different types of orange peel?sweet Italian peel cut directly before being added, and peel from bitter and green bitter oranges, extremely rich in essential oils.
Hops: an attentive selection of a total of ten exclusively American hop varieties, to give Midòna Limited Edition instead a fine IPA character. Citra, Simcoe and Amarillo are certainly the rarest and most valuable, with an easily distinguishable personality, but Cascade, Willamette, Chinook, Centennial, Ahtanum, Equinox and Palisade also contribute to the overall bouquet.

PERFECT FOR

Risotto with zucchini and thyme, creamed risotto with citrus fruits (lemons and oranges). Egg pasta with artichoke cream and pancetta; pasta with vegetable sauce, provola or other sweet cheeses; swordfish carpaccio with pink peppercorns; savoury flan with spinach, goat?s cheese and fresh cow's cheese.

AT RIMINI WE DRINK IT WITH:

Heavily flavoured piadina flatbreads with generous fillings.
